Neeboo ka achaar

Ingredients

  • 750 g lemon

  • 250 ml lemon juice

  • 200 g salt

  • 250 g julienned ginger

  • 15-20 ea green chillies (roughly cut)

  • 100 g cumin seeds


Method

Wash and pat dry lemon

Cut lemon into 4 pieces

Combine salt and lemon pieces into a jar, mix well

Cover with a muslin cloth

Keep the jar under sunlight for 2 days




Now combine cumin seeds, ginger, green chillies and lemon into salted lemon and keep under the sunlight to pickle for 7 days.

The pickle is ready when the lemon rind gets soft.


Enjoy with haleem, khichdi, daal chawal; basically just about anything!
